Now We’re Cooking
2Since JJ’s schedule has been so crazy, I have been trying to cook more often. The meals that I usually make only amount to me cooking chicken wings or quesadillas. I had planned on baking catfish, but when I checked the price of fresh fish, I decided to go with Tilapia. I made a baked Cajun version of fried fish. I coated the filets with cornmeal and Cajun seasoning then topped them with lemon juice and melted butter. I was pretty proud of the results, and it really did taste like it was fried.
The Pride of Mississippi Marching Band
0JJ and I went and watched The Pride of Mississippi’s preview show on campus last night. Hearing the band play really reminded me that school has started and that football season is upon us. Now, if we can just get some “fall” weather. The band was great as usual, and I can’t wait to see their full show this fall.
Jet Lag and Red Tape
2Even though we arrived in the states almost five days ago, I still am struggling with getting back on schedule. Wednesday night I feel asleep at 6AM. Thursday and Saturday nights I sleep from 9AM to around 3AM. Friday night I sleep around 12 hours between the hours of 4AM and 3PM. Last night, I was exhausted and feel asleep at 11PM but was back up at 3, 4, and now wide awake at 5AM. At least today, I feel well rested and am making good use of my time trying to get organized for the new semester.
I am in the process of removing the conditions on JJ’s “green” card. Since we were married less than two years when we applied for her VISA, she was only given a conditional permanent resident visa. I need to supply a host of information/documents proving that we are really married and give Uncle Sam a check for almost $1,000. Lovely. At least the fee was not a surprise and we have been anticipating spending this money for about a year now. I have collected most of our documents, but still need to get a couple of letters proving our relationship written by my parents and a friend of ours, and I need to edit some of our photos that show that we have traveled together and have a real life here in Mississippi.
I finalized my work schedule on Friday, and I am very pleased with my hours. I work split shifts everyday except Mondays, but it looks likes I will be off on Fridays. JJ still doesn’t know her schedule yet. She will be teaching Math 99 this term so she will have to hold office hours and work less hours in the Math Tutoring Center. Hopefully, our shcedules will match up once again since we only have one mode of transportation.
I am trying to taking advantage of the extra time so I am about to walk outside and attempt to exercise. 74 degrees at 5AM is not that bad for Mississippi.

Korean Cookout

To get in the spirit of our upcoming trip to Korea, we had a Korea barbeque last night. One of our good friends is quite the cook, and he did all of the cooking. Since it has been awahile since we have hosted one of these parties, when we return from Korea, it will be our turn to cook.
I am getting excited about all the Korean meals that JJ and I are going to be able to enjoy in Korea. I have been missing the multitude of side dishes that are served with meals in Korea. We really do not have a problem obtaining Korean cuts of beef, but getting good side dishes has been a problem.
Jaemon is one of the reasons that my Korean has improved a bit over the last few months. Jaemon is usually the one that interrupts me when I am telling a story in English and implores me to continue in Korean. His English is very good, and he only asks so that I get more practice in Korean. I have made some improvement, but the real test will be in a couple of weeks when I am surrounded by family that speaks little English. I have been brushing up on a few key phrases that I know will be uttered by father in law and can only hope that I will have the correct responses.
